Tasting Notes

Colour: Dark Ruby coloured.

Nose: Poignant oak and cherry aromas dominate the nose. Supporting aromas are predominately vegetative in nature and include forest floor, rhubarb and mushroom.

Palate: On the palate the gentleness of the Pinot Noir grape comes to the fore.

Food: Perfect for white meat and vegetable dishes.

Ageing: Will age splendidly over the next three to five years.

Vinivication: 30% whole bunch and 70% destemmed. No cold soak took place. Grapes and must was not inoculated with selected wine yeasts and fermentation was left to start naturally. Malolactic fermentation took place in 300 L French Oak barrels. The wine was not racked before bottling and did not go through any filtrations prior to bottling.

Viticulture: The Pinot Noir vineyards have a (cooler) south facing aspect, and are 310mabove sea level. Planted with a vine spacing of 2.5m x 1.5m in deep red/yellow soils with high water retention capacity, but very well drained.

Tasting Notes

Colour: A dark, rich plummy colour going over to a purple rim.

Nose: Dark red hues lead to a peppery nose.

Palate: A combination of red and black berry flavours. Oak aromas with smooth, soft tannins.

Food: A distinct blend of both Northern & Southern Rhône characteristics contributes to a remarkably enjoyable wine to go well with most red & white meat.

Ageing: Will age splendidly over the next three to seven years.

Vinivication: After destalking the Shiraz, berries were hand sorted and cooled down to +/- 14 ºC. After a gentle crush, the must was cold soaked for 5 days with regular punch downs wherafter it was inoculated with selected wine yeast. The wine was fermented in stainless steel tanks with 3 pump overs per day and with daily delestage. Malolactic fermentation took place where after the wine was racked into 225 litre & 300 litre French Oak barrels where it matured for 11 months

Viticulture: The Shiraz vineyards have a warmer North West aspect, and are 337m above sea level. Planted with a vine spacing 2.5m x 1.6m in deep red/brown soils with high water retention capacity, but very well drained.

100 % Cabernet Sauvignon, geselecteerd uit Waterford zijn eigen wijngaarden, gekenmerkt door zijn Helderberg terroir (koffieklip, zandsteen, roodsteen…).

Hier verkrijgt menintense fruitgeuren die subtiel en puur overkomen zowel in de neus als in de mond. Intense zwartbessen, zwart kers, munt, chocolade geuren, dierlijke fijnheid en zachte soepele tannines die een streling zijn.

Tasting notes Winemaker: “Intense aroma of Cedar wood, cigarbox and cassis.  The palate is tightly structured with a classic dry Cabernet Sauvignon finish.  The 2008 vintage shows a lightness in extract with a fresh midpalate.  It’s a vintage that will age gracefully, yet can be appreciated in youth”.
