Tasting Notes

Colour: Brilliant with a green edge.

Nose: The wine displays a generous portion of freshly cut herbaceousness and a touch of lime rind. Hints of lychee and white peach support the green flavours.

Palate: The cool climate terroir comes through on the palate as a sign of the wine’s pedigree. The mouth feel balances the acidity of the wine.

Food: The expressive and crisp character of the wine will allow it to accompany a variety of chicken and fish dishes.

Ageing: Will age splendidly over the next three to four years

Vinivication: Grapes were harvested on two different picking dates for more complexity. The first batch grapes had 20 hours skin contact, and the second batch only 5 hours. The grapes were pressed in a basket press and settled down for 24 hours before inoculation. The two batches fermented separately. Different yeast strains and fermentation temperatures were used. The wine stayed on the lees for 3 months and was stirred monthly to create more mouth feeling

Tasting Notes

Colour: Pale straw colour with a hint of green.

Nose: A voluptuous nose displaying lemon rind and butter with softer vanilla, smokiness and peach in the background. The complexity confirms the quality of the wine.

Palate: The mouth feel is wide and soft. Acidity gently pierces theaftertaste to provide freshness.

Food: Will pair with a variety of white meat, fish and vegetable dishes.

Ageing: Will age splendidly over the next three to four years.

Vinivication: 50% of the final blend was fermented in stainless steel tanks. The must was inoculated with selected yeast and fermentation took place at low and constant temperatures. The other 50% fermented in French Oak barrels. This component was not inoculated; natural fermentation took place over a period of 9 months. This part of the blend went through Malolactic fermentation. After 6 months a little part of the wooded chardonnay went to the stainless steel tank for optimum integration…the rest stayed in the barrels for 10 months.

Viticulture: The Chardonnay vineyards have a (cooler) south facing aspect, and are 295m above sea level. Planted with a vine spacing of 2.5m x 1.5m in deep red/yellow soils with high water retention capacity, but very well drained.

Tasting Notes

Colour: A dark, rich plummy colour going over to a purple rim.

Nose: Dark red hues lead to a peppery nose.

Palate: A combination of red and black berry flavours. Oak aromas with smooth, soft tannins.

Food: A distinct blend of both Northern & Southern Rhône characteristics contributes to a remarkably enjoyable wine to go well with most red & white meat.

Ageing: Will age splendidly over the next three to seven years.

Vinivication: After destalking the Shiraz, berries were hand sorted and cooled down to +/- 14 ºC. After a gentle crush, the must was cold soaked for 5 days with regular punch downs wherafter it was inoculated with selected wine yeast. The wine was fermented in stainless steel tanks with 3 pump overs per day and with daily delestage. Malolactic fermentation took place where after the wine was racked into 225 litre & 300 litre French Oak barrels where it matured for 11 months

Viticulture: The Shiraz vineyards have a warmer North West aspect, and are 337m above sea level. Planted with a vine spacing 2.5m x 1.6m in deep red/brown soils with high water retention capacity, but very well drained.
