Een prachtige Méthode Cap Classique, bestaande uit 60% Pinot Noir & 40% Chardonnay.

Tasting notes Winemaker: “Fruit driven beautifully poised. Aromas with peace and hints of citrus. Rich creamy flavours with a lively mousse which awakens the palate. A good combination of fruitiness and yeastiness. Noble Pinot Noir and Chardonnay grapes provide the ingredients for this classy Cap Classique wine, styled on the classic Champagne wines. The palate has both intensity and delicacy. Crisp with a lingering finish.  Excellent to enjoy with food, an aperitif or with fresh oysters – a wine for
all occasions!”

Bon Courage André’s Fame Colombard 2009

100% Colombard.  De druiven werden op hun geheel ontritst.  Enkel de “free running juice” werd gebruikt.  Deze wijn kreeg 4 uur skin-contact.  Na fermentatie (droog): racking, filtering en bottelering.

Tasting notes Winemaker: “This wine’s attraction lies in its fresh, exuberant aromas and invigorating palate. The concentrated guava and pineapple fruitiness on the nose spills over onto the palate. Rounded in the mouth full of flavour, yet light and lively. Delightful summer quaffer, yet a pleasing food wine. A lovely patio wine – best consumed in its youth. This juicy crisp wine, with its lingering fruity after-taste is ideal with seafood
and lightly spiced meats”.

Bon Courage Chardonnay Prestige Cuvée 2010

De druiven kregen 24 uur skin-contact.  Fermentatie in inox tanks, met suiker op 16 Balling.  Daarna werd de wijn geracked in Franse houten barrels (2nd & 3rd fill barrels).  De wijn werd 8 maanden op z’n bezinksel gehouden…  in de eerste maand werd deze 1x per week geroerd; daarna, 1x per maand.

Uiteindelijk werden alle vaten geblendeerd en volgde bottelering…

Tasting notes Winemaker: “The influence of the French oak gives this wine an appealing round texture and great complexity. A lovely harmony is formed by a hint of citrus and vanilla that makes an elegant wine. Lime gold colour indicates some mature notes which are highlighted in a big, full nose where peach and citrus combine to give super complexity. Big mouth packed with flavours including grapefruit, lime, lees. Vanilla and butterscotch give crème bruleè characters. This wine is delicious with fish in a creamy sauce, sushi, Thai dishes, paté and turkey. Drinkable now or over the next 2 to 3 years”.

Bon Courage Shiraz 2008

Halfweg tijdens fermentatie, werd de helft van de wijn in Franse houten vaten gebracht om droog te fermenteren.  De andere helft bleef in tank om door te fermenteren op de schil.  Daarna werd ook deze wijn, overgepompt naar Franse vaten.

De wijn wordt uiteindelijk 15 tot 18 maanden op vat gehouden:  20% in nieuwe vaten en de rest, 2de & 3rde jaars vaten.

Tasting notes Winemaker: “Although there remains some youthful greenness, the bouquet of this full bodied wine suggests tremendously ripe fruit, reminiscent of spicy plum jam. Ripe, sweet-fruited nose with loads of berry fruit, pepper and vanilla with subtle hints of Karoo boss.  Full rounded mouth adds plum to all that the nose suggested. Smoke and spice develop as the glass stands. Rounded tannins make for very easy drinking even at this early age but will develop with great benefit over 4 / 5 years. This wine should benefit from further maturation.  Good fine wine, especially rich stews and winter food. It is ideal spiced game casseroles, stuffed roast pork or lamb”.

Bon Courage Cabernet Sauvignon 2008

12 maanden verouderd in Franse vaten.  Daarna werd de wijn gefilterd en gebotteld.

Tasting notes Winemaker: “This complex wine features rich flavours of fresh berries and slight nuttiness. Ripe plum, strawberry, black cherry mingles with vanilla and peppery spice on the nose. Full rounded mouth with clean toast oak backing. Rounded mouth moves into supple tannin finish.  It is a finely balanced wine to suit every discerning palate and will gain a more velvet feel with another two years of careful cellaring. It calls for good
quality meat dishes including steak, stews and roast”.
