Een ideale Méthode Cap Classique om te combineren met de maaltijd!

De druiven zijn afkomstig van een 20 jaar oude Chardonnay-wijngaard.

Tasting notes Winemaker: “The nose is quite clean and complex with notes of citrus, minerals, marmite and a fine oak complexity. The palate is alive with fine bubbles caressing the palate, the nose follows through on the mouth with a refreshingly dry citrus,
butterscotch, minerally finish”.

Deze Chardonnay is 100% barrel fermented en verouderd (10 maanden) in speciaal geselecteerde kleine (225 l.) Franse vaten die zorgvuldig werden geselecteerd bij Bourgondische coopers.

Deze wijn is het product van unieke, extreme en radicale wijngaardpercelen, gelegen in de
Hemel-en-Aarde Vallei  én in de Elgin Vallei.  De gronden zijn afgeleid van Table Mountain sandstone (zandsteen), bedekt met “clay rich shale” (kleihoudende scalie steen) van de welgekende Bokkeveld groep.

Door het koude klimaat hier, moesten de druiven wat langer blijven hangen om rijp te worden.  Ze werden geplukt in de vroege uurtjes van de ochtend, tijdens de laatste week van februari en de eerste week van maart 2009.
Daarna werden ze opnieuw zo vlug mogelijk naar de kelder gebracht, om hun fruitsmaken te behoudenurgondische coopers.

Tasting notes winemaker:  “It has a rich core of fiercely expressive grapefruit, white peach, ripe pear and grilled hazel nuts aromas and flavours. The palate is penetrating and profound yet graceful and poised. A forceful mineral acidity is beautifully balanced by a subtle yet compelling intensity of fruit. A classic length, creaminess and intriguing complexity define this stylish, world class Chardonnay”.

De druiven kregen 24 uur skin-contact.  Fermentatie in inox tanks, met suiker op 16 Balling.  Daarna werd de wijn geracked in Franse houten barrels (2nd & 3rd fill barrels).  De wijn werd 8 maanden op z’n bezinksel gehouden…  in de eerste maand werd deze 1x per week geroerd; daarna, 1x per maand.

Uiteindelijk werden alle vaten geblendeerd en volgde bottelering…

Tasting notes Winemaker: “The influence of the French oak gives this wine an appealing round texture and great complexity. A lovely harmony is formed by a hint of citrus and vanilla that makes an elegant wine. Lime gold colour indicates some mature notes which are highlighted in a big, full nose where peach and citrus combine to give super complexity. Big mouth packed with flavours including grapefruit, lime, lees. Vanilla and butterscotch give crème bruleè characters. This wine is delicious with fish in a creamy sauce, sushi, Thai dishes, paté and turkey. Drinkable now or over the next 2 to 3 years”.

Tasting notes Winemaker: “The wine shows a dense straw colour with a green tinge. Limes, complex citrus, caper flowers, peaches and cream and minerals on the nose, the palate is fresh with citrus, lemon meringue and tropical notes with a long mineral finish”.

De witte wijnen van het Estate Waterford zijn altijd afkomstig van afgebakende “single” wijngaarden, terwijl de rode wijnen, altijd een blend zijn van hun diverse wijngaarden om zo beter het terroir te kunnen weergeven van het Estate.

Een prachtige Chardonnay, waarvan we jammer genoeg veel te weinig van kunnen aankopen.  Als we 120 flessen per jaar kunnen aankopen, mogen we al tevreden zijn!!

100% barrel fermented in 225 l vaten.

Tasting notes Winemaker: “Vibrant green with yellow undertone.  Ripe tropical stone fruit with citrus blossom and vanilla pod on aroma.  The palate: tightly structure with dense round midbody and refreshing acid to add longevity.  Ideally consumed in 3 – 7 years if cellared in optimal conditions”.

Newton Johnson maakt 3 reeksen van wijnen, namelijk de Felicité reeks, de Newton Johnson reeks én de Newton Johnson “Domaine” reeks.

De Felicité reeks zijn hun alternatieve wijnen; de meer easy-drinking wijnen, de wijnen voor gezellige bijeenkomsten, …  prijs/kwalitatief lekkere wijnen!

De druiven zijn afkomstig van de wijngaarden van Nadia’s familie.

Tasting notes Winemaker: “A freshly styled unwooded Chardonnay.  Shows beautiful and vibrant pineapple and peach fruit, finishing with a tangy acidity. The uniquely alkaline soils in the area deliver a soft, very approachable texture”.

KoRoVa’s huiswijn… prijs/kwaliteit is dit een voorbeeld van een lekkere Zuid Afrikaanse “easy” drinking wine !!!

Tasting notes Winemaker: “This unwooded Chardonnay with its soft vanilla and banana flavours is the ideal Chardonnay if don’t like the taste of wood but don’t want to compromise on flavour and aftertaste. Enjoy with fish, chicken or vegetables in a buttery sauce, fish carpaccio and cream cheese”.

De eerste wijn, bij Newton Johnson in 1999 geproduceerd, die afkomstig is van een specifieke wijngaard genoemd “Kaaimansgat”.

Deze afgezonderde kleine vallei, ongeveer 80 km in het binnenland, is één van de hoogste (en dus koele) wijngaardpercelen in de Kaap (700 m), waardoor het mogelijk is om een mineralige stijl van Chardonnay te produceren die zijn natuurlijke zuren kan behouden.

De wijngaard wordt niet geïrrigeerd en toont een indrukwekkende, constante kwaliteit aan fruit.

100% natuurlijke oorspronkelijke en malolactische fermentatie.  Er wordt opnieuw gebruik gemaakt van Franse eiken vaten (228 l) en dit voor 10 maanden.  De vaten zijn een mix van diverse Bourgondische kuipers.  33% NIEUWE vaten en de rest, 3de, 3de en 4de jaars vaten.

Hun eerste oogsten van deze variëteit, zijn nog steeds vol leven en tonen een verouderingspotentieel van 8 jaar en meer.

Tasting notes Winemaker: “This vineyard, called Kaaimansgat, consistently produces it’s strikingly expressive ripe citrus and mineral character every year. Elegant and concentrated, the discreet oaking complements with spice and a fragrant nuttiness in the background. The vineyard’s striking altitude provides fresh, clean acidity that lingers in the finish”.

Dit is de 2de oogst van Chardonnay afkomstig van de Newton Johnson wijngaard in de Upper Hemel-en-Aarde Valley.

Na 8 jaar management in deze wijngaard, kunnen ze met trots zeggen, dat deze nu virus-vrij is en 100 % biologisch.

Hun doel?  fijne aroma’s van de wijngaard meegeven.  Top-Chardonnay’s in de wereld, hebben aangetoond dat aroma’s niet “groot” moeten zijn om een wijn “groot” te maken.  Intrige en finesse zijn de sleutels van succes!

100% veroudering in Franse eiken vaten (228 l) en dit voor 10 maanden.  Er wordt een mengeling gebruikt van diverse Bourgondische vaten, waaronder 25% nieuw, 40% 2de jaars, 20% 3de jaars en 15% 4de jaars.

Tasting notes Winemaker: “From the finely structured decomposed granite and clay soils of the Domaine.  Deceptively elegant as this wine opens up to produce complex characters with depth, and long flavours in the finish. The steely acidity matches the lime fruit with nutty rich flavours in the background”.

Aroma – it is a very complex and concentrated wine with dense layers of flavours of minerality, citrus, honey, tropical fruit, spices and crème brûlée.  The complex flavour spectrum repeats in the mouth with power and elegance and a long citrus/spicy/crème brûlée finish”.
